In this session, inspired by The Spark of Fire: Cooking’s Role in Human Evolution and The Art of Cooking and Anthropology, we delve into the story of humanity as told through cooking tools, stoves, and early flavors. We trace the impact of major historical events—from the discovery of fire to agriculture and modern kitchens—on the evolution of our dishes and identities. This prompts us to rethink a simple yet profound question: Is food what makes us human?
This intellectually charged session, presented from the chef’s perspective rather than the academic, blends science, culture, and sensory pleasure into a rich, flavorful exploration.

Francisco Araya's long and eventful career showcases his international hospitality expertise and vocational education, including a period spent as Director of the Culinary Arts program at IP Duoc UC Valparaiso and a Leadership Diploma
from Universidad Adolfo Ibanez. Passionate about crafting gourmet culinary delights and training the next generation of Chefs, this Honduras-born award-winning Chef is currently serving as the Centre Director of ICCA Abu Dhabi.
